Costa Rican food is mostly based in ingredientes such as rice, beans, meat, vegetables, corn and fruit, hence, accomplishing dishes that adapt to celiac diets is easy.
For our international cuisine, we carefully pick our ingredients such as gluten-free oils to cook our patacones and nachos. We use special flour for our gluten-free pancakes and breads. Even our salad dressings will be safe, as well as our tortillas which instead of regular wheat they are made of corn.
